The open, modern dining room at Piñons combines Old West touches (a rustic-wood decor and a faux-tin ceiling) with a contemporary menu that goes beyond American-style entrées by incorporating selections like sashimi tuna tacos and Russian caviar. The interior fills up fast, but you can eat at the bar, with its budget-friendly, two-course, prix-fixe menu. In summer, the patio provides views of Aspen Mountain.
