Inside the Viceroy Snowmass hotel, Eight K restaurant—named for its 8,000-foot elevation—commands stunning views of the surrounding mountains. In the spacious dining room, diners chow down on gourmet mountain fare with Southern influences. Chef Will Nolan's Cajun roots come out in such menu items as barbecued shrimp and grits, duck and andouille gumbo, Wagyu beef burger, and cast-iron–seared bass. The menu varies seasonally and focuses on fresh, locally sourced ingredients whenever possible. Check out the restaurant's impressive wine wall, cozy lounges in front of a roaring fireplace, and the 87-foot glass bar lit up in blue neon.
