The San Diego outpost of this fusion trendsetter, located in the Hard Rock Hotel, serves inventive sushi and hot dishes with Japanese-Peruvian flair. The sexy if rather noisy room with fiery red accents and jade-green walls is a cool space to enjoy founding chef Nobu Matsuhisa’s classics like sashimi tacos, lobster with yuzu dressing, or black cod with miso. When feeling adventurous, let the sushi chef’s whims guide you through an omakase, or tasting menu, that begins at $100. A nightly happy hour is a good introduction, with tapas-size nibbles, specialty cocktails, sake and beers at $12 and under.
