Equal parts 21st-century gentleman's club and brooding urban loft, this downtown restaurant seduces with a suave palette of marble, leather, bronze, and polished walnut surfaces. Chef Dustin Falcon's cuisine is similarly elegant, with pickled pearl onions, apple, sherry, and candied pecans elevating a garden beets salad, and Sicilian pistachio, Medjool dates, spiced yogurt, and fried naan balls playing well with each other and their dish's centerpiece, pan-seared Spanish octopus. The last dish, an early hit when the restaurant opened in 2016, paired perfectly with a French Pinot Noir from the international wine list. The culinary derring-do extends to the bar, where a newfangled old-fashioned, one of several specialty cocktails, comes off mildly smoky but not greasy by a mystical infusion of rendered bacon fat, with fresh apple-cider syrup providing the requisite sweet note and Angostura bitters the gravitas.
