Kendall-Jackson's downtown restaurant opened with a novel wine-oriented tasting menu that has evolved into a more straightforward appetizers-salads-entrées format, but the emphasis on pairing top-tier Jackson-label wines and food remains. Much of chef Justin Wangler's produce finds its way from K-J's 3-acre Santa Rosa organic farm to diners' tables in a mere few hours. With ingredients this fresh, Wangler wisely displays a light touch: summertime heirloom-tomato dishes, for instance, might have no dressing at all, the same for salads of tender mixed baby greens. Popular appetizers include lamb sliders; duck breast and local salmon are consistent main-course favorites. Tempura maitake mushrooms, the tour de force side, are served with a sweet Korean soy sauce that plays well off the wafflelike notes in the tempura batter.
