The classically influenced Pacific Northwest menu changes seasonally but might feature such appetizers as Angus beef tartare or caramelized scallops and pork. Mains, featuring sustainably sourced meat and seafood, might include roasted Haida Gwaii halibut or butter-poached venison tenderloin.
