"Rocky Mountain comfort food" made with organically grown local ingredients is served here, with bison a specialty. Slow cooking is an emphasis, and everything down to the ketchup and mustard for the bison burgers is made from scratch in-house. The contemporary decor, with hardwood floors and vaulted ceilings, focuses attention on the open kitchen, where the chefs prepare bison onion soup and braised bison short ribs with roasted potatoes. In addition to these signature dishes, wild British Columbia steelhead trout, poached halibut, and Alberta lamb grace the menu. The à la carte Sunday brunch is very popular.
