For serenity and mountain greenery, you can't beat this family-run lodge with panoramic views and the opportunity to see hummingbirds and other highland species from the dining terrace. A mountain stream rushes through the hillside garden where three wooden cabins, with two rooms each, perch. Each room has its own private veranda and tile bathroom with skylight. In addition, there are two spacious junior suites with fireplaces, kitchenettes, sunken whirlpool baths with views, and king-size beds. Owners Gary and Edna Roberts are known for delicious baked trout dinners and creative vegetarian dishes. Gary leads a free quetzal quest every day at 7 am along a country road, where you might also spot some of the 200-plus species on the lodge's bird list. If you ask ahead, you can end your day with a soak in a natural-stone hot tub under starry skies. To get here from the Pan-American Highway, turn at the sign for Copey and follow the scenic dirt road 8 km (5 miles).
