At his intimate, poolside restaurant in the casually chic Hotel Arco Iris, innovative chef Shlomy Koren, Israeli-born and Cordon Bleu–trained, transforms fresh local ingredients into sophisticated Mediterranean-fusion dishes you would pay a small fortune for on the Riviera. The luring smell of sautéed garlic teases the senses for what's ahead: salty soft focaccia, lobster and leek terrine, portobellos on polenta, and black miso fish on eggplant and white beans. Vegan dishes are plentiful, like the cauliflower with tahini and scallions, or the green risotto with basil, leeks, and mushrooms. The pan-seared snapper served over artichoke and spinach is beautifully moist, and sashimi comes doused in ginger-flavored, sizzling sesame oil. Richness prevails in the white chocolate mousse with strawberries. Service is swift and attentive and the occasional live jazz adds to the pleasant atmosphere.
