Right on Ürgüp's main square, this welcoming lair takes its name from the fireplace in the center that warms guests in winter; in summer, you can dine outside on the rooftop terrace. The menu focuses on regional specialties. Appetizers include warm hummus with pastırma (Turkish pastrami). For a main, try the testi kebabı (a meat and vegetable dish cooked in a clay vessel, which you break open yourself by whacking it with a large knife) or one of the kiremit stews baked in a terra-cotta casserole.
