Housed in a magnificent old mansion at the top of Göreme's hotel hill, Seten provides a classy setting in which to enjoy a range of top-notch mezes and delicious mains. Standouts among the mezes include imam bayıldı (braised stuffed eggplant) and Circassian-style chicken. The rice-stuffed squash blossoms are a good choice for vegetarians. Served in generous portions, the signature "Seten-style kebab"—eggplant and chicken or lamb roasted vertically on a skewer in a traditional brick oven so the juices of the two mix—is also not to be missed. Seating is in small, intimate rooms or in the courtyard in summer.
