Creating a taste of pure upper Aragón, Huesca's top restaurant makes inventive use of first-rate local ingredients like wild mushrooms, wild boar, venison, and lamb. The glass-walled kitchen is as original as the cooking that emerges from it, and the wine list is strong in Somontanos, Huesca's own D.O. Look for lomo de ternasco cocinado a baja temperatura con embutidos de Graos (veal cooked at low temperature with Graos sausage) or paticas de cordero deshuesados (boned lamb's trotters). There is also a tasting menu.
