Fodor's Review

After running a family-owned restaurant in Valencia, brothers Nacho and Jorge Gadea decided to try their luck in Madrid. Here, just a few blocks off Puerta del Sol, the austere yet polished restaurant, with about 10 tables, has a menu that resembles that of its elder sibling, still looking north for inspiration. Among the starters are staples such as potato salad, roasted bone marrow with coriander salad, or grilled lamb sweetbreads. Main courses include some prime cuts of beef, one of the city’s best steak tartares, and a short and careful selection of fish, such as kokotxas de merluza (hake jowls) grilled or battered, or juicy ray with black butter sauce.
