Run by Pedro Torres Pacheco, the celebrated restaurateur who has done much to promote Cuenca's cuisine, this restaurant offers local produce, fish, and a variety of game during hunting season, all with an upscale vibe. Reopened in early 2015 after yearlong renovations, the sleek and modern white dining room is in one of the iconic, gravity-defying Casas Colgadas, next to the Museum of Abstract Art. There are fantastic views of the other hanging houses and the plunging gorge below—not for the acrophobic!
