Of all the three-Michelin-star outposts in the Basque Country, Victor Arguinzoniz's Etxebarri may be the most exclusive, since it only opens for lunch (except for Saturday) and reservations are limited. Here, grilling is elevated to an art form, with various types of woods, coals, and tools carefully selected for the preparation of each dish. Simple is best: opt for Etxebarri classics like homemade chorizo, smoked caviar, or (if you're on someone else's dime) baby elvers.
