A manairó is a mysterious Pyrenean elf, and Jordi Herrera may be the culinary version: his ingenious cooking methods—such as filet mignon al faquir (heated from within on red-hot spikes) or blowtorched on a homemade centrifuge—may seem eccentric but produce undeniably good results. Melt-in-your-mouth meat dishes form the centerpiece of Manairó's menus, but they are ably supported by a bonanza of bold and confident creations that aren't frightened of big flavors. The intimate and edgy design of the dining room is a perfect reflection of the cuisine.
