A manairó is a mysterious Pyrenean elf, and Jordi Herrera may be the culinary version; his ingenious meat-cooking methods—such as filet mignon al faquir (heated from within on red-hot spikes) or blowtorched on a homemade centrifuge—may seem eccentric but produce diabolically good results. Melt-in-your-mouth meat dishes form the centerpiece of Manairó's menus, but they are ably supported by a bonanza of bold and confident creations that aren't frightened of big flavors. Herrera's food is fun to look at and even better to eat. The intimate and edgy design of the dining room is a perfect reflection of the cuisine.
