The internationally awarded chef, Ana Ros, makes use of homegrown vegetables and fresh trout from the nearby alpine-water creek with rare inventiveness and skill. The service is graceful and the wine and cheese cellars (where cheeses are made in-house) are first rate. This restaurant is a must.
