Sophisticated surroundings and sumptuous cuisine make this restaurant, originally opened in 1925, one of Edinburgh's best spots for fine dining. London chef–restaurateur brothers Jeff and Chris Galvin impart their expertise in the classic French-inspired cuisine and impressive wine list. The menu changes seasonally, but there are regular appearances of Galvin classics like lasagne of North Berwick crab and seared pavé of turbot with squid-ink farfalle. The desserts are great, but if you're near your limit, go for the exceptional cheese board instead. Come for lunch on Saturday to order à la carte (mains around £35); otherwise dinners are prix-fixe only, with a minimum of three courses for £65.
