Sophisticated surroundings and sumptuous cuisine make this restaurant dating from 1925 one of Edinburgh's best spots for fine dining. London chef–restaurateur brothers Jeff and Chris Galvin impart their expertise and high standards in the classic French food and impressive wine list. Expect exquisite dishes that let quality produce shine: Loch Awe trout with almonds, Cumbrian chateaubriand with shallot cream, or lemon sole with curry and raisin dressing, for example. Desserts may include strawberry soufflé or a classic tarte tatin. The seasonal menu offers the best value, going for £29 for two courses, or for a splurge, look to the three-course gourmand menu (£68, with the sommelier's wine pairings £120).
