The Moscow Ritz-Carlton's flagship restaurant, Gingko, is a cool and collected pan-Asian place with an emphasis on Japanese cuisine. With a floor-to-ceiling web of windowpanes that angles out like a flying saucer, some say Gingko feels like an airport lounge, but the marble floors give it a touch of luxury. The kitchen is led by one of the city's leading culinary lights, Japanese chef Seiji Kusano. He surrounds his country's traditional flavors with an often creative mix of Thai, Chinese, and Indonesian dishes, so that Thai curries and Peking duck can be ordered alongside immaculately fresh sashimi and sushi. Diners are a mix of hotel guests and upper-crust epicures.
