José Avillez, one of Portugal's most renowned young chefs, is synonymous with fine dining in Lisbon, with several high-end establishments bearing his name. To see what all the fuss is about, visit Belcanto, which holds two Michelin stars. The inventive cuisine uses the latest techniques in playing on traditional themes. The à la carte list features signature Avillez dishes such as the heavenly pombo à "Convento-de-Alcântara" (stewed pigeon); and raia Jackson Pollock—skate presented to look just like one of the artist's paintings (a copy is provided for comparison). The olive trilogy (crunchy, spherified, and liquid) is a fun starter, while the petits fours are a divine ender.
