Amsterdam's famed Rijksmuseum displays Dutch-created artworks only, and the adjacent restaurant, with warm but understated decor, shares a similar lofty goal: to use as many Dutch-produced or -influenced products as possible. This means the seafood- and meat-heavy menu of mainly small plates may feature such delights as local cod fillet fried on sourdough with cumin, Brussels sprout leaves, and smoked eel, along with dishes inspired by countries where the Dutch have had an influence, such as Indonesian gado gado salad with sweetbread, prawn, and peanut sauce. Several times a year international guest chefs create their own menu additions.
