When dining out in the Dolomites, it’s evident you are in a part of Italy that was once part of the Austrian Empire. While you can still find traditional Italian pasta and pizza, in this region the tastes blend with Austro-Germanic flare. Sausages, spätzle (like pasta but with a different consistency), meats, cheeses, and polenta can be found on nearly every menu—foods that will sustain the body through a long day of skiing or hiking. Many restaurants either raise their own crops and livestock, or have a direct relationship with their farmers and providers.
