For a fabulous view of Mainz, head for the terrace (fourth floor) or glass-lined restaurant atop the state theater (sixth floor). Use the entrance on the left side of the building. Talented young chef Dirk Maus prepares regional dishes, often with an exotic twist, such as veal fillet and liver with capers, vanilla, and cinnamon. His cooking is very aromatic, colorful, flavorful, and made with the freshest ingredients possible. The wine list is very good, particularly the selection of Rheinhessen wines.
