A living monument of Provence, the celebrated food critic first made her name known through posh food columns and The Food Lover's Guide to France. Firsthand, she now introduces people to the splendors of French cooking in her lovely farmhouse near Vaison through weeklong cooking seminars—luxe ($5,500 a student), 12 students only, and set over Madame Wells's own Chanteduc vineyards.
