This is the only commercial maker of authentic brandade, Nîmes's signature salt-cod-and-olive-oil paste. It's paddled fresh into a plastic carton or sold in sealed jars so you can take it home. The paste is available exclusively at the Nîmes Souvenirs boutique, open seven days a week across from the Palais de Justice (at the entrance to Arènes).
