Take in the classic decor and polished clientele here (and the high prices) and get ready to embark on an adventure in fine dining. It takes an expert in traditional techniques to tweak the classics just so to bring a contemporary edge, and chef Jean-Lux Le Formal is more than up to the task with dishes that are beautiful, delicious, and expressive without veering off course. Fixed-price menus are the way to go here, though seven courses at dinner (€52, €82 for the all-truffle menu) can be daunting; but it's a great deal and an excellent way to experience all this talented chef can do. So come with an appetite—and plenty of time.
