After a takeover by the French-trained American chef Daniel Rose, this bistro stalwart transformed from a duckling to a swan, with elegant revamps of its bistro decor and an upgrade on those deeply satisfying French comfort-food classics. The humble steak frites is a buttery, melt-in-the-mouth slab of beef ringed by a halo of perfectly crisp golden frites. Start with the exceptional house fois gras with artichokes, followed by a splendid pot à feu (veal and vegetables in broth). All meals begin with superb gougères (warm cheesy bread), and, if you're wise, will end with dessert, which might be a classic mousse au chocolat, apricot and almond tart, or one of the best tarte tatins in Paris.
