Canterbury's most sought-after tables are at Michael Caines (not the actor—an eminent British chef with a similar name). Occupying a light-filled corner of the trendy ABode Canterbury, with its pine tables, white walls, and sophisticated country style, this place is hugely popular with local foodies. The modern European cuisine is excellent; dishes change weekly but could include roast partridge with toasted walnuts or Kentish pork with pumpkin puree that's spiced with smoked paprika. Leave room for a dessert of chocolate fondant with salted peanuts or apple mousse served with green apple sorbet. The seven-course tasting menu (£55, or £85 with matching wine) is great for special occasions. True aficionados will want to reserve the chef's table in the kitchen to watch the staff in action.
