Aussie chef Brett Graham wins hearts, minds, and some serious global accolades at this upbeat, no-dairy, no-carb modern French (with Pacific and British hints) dining landmark. Global gourmands will struggle to find a more inventive vegetable dish than Graham's ash-baked celeriac with hazelnut and wood sorrel, and it's impossible to best his ultrapretty, precise, and complex mains. Besides his obsessive interest in all things British game, Graham is also famed for his wizard desserts, so finish with thinly sliced figs with honey, olives, and sourdough ice cream.
