The Faroe Islands' most celebrated contribution to the new Nordic food movement can be found at this restaurant inside the hilltop Hotel Foroyar, where chefs translate the Faroese spirit into dishes like cod and asparagus, crab and radishes, and lamb and kohlrabi. Koks specializes in raw ingredients primarily sourced from local farmers and fishermen. Meals are prix-fixe only and expensive. Order a meat dish and you'll be given a traditional Faroese whale knife to cut it. The panoramic view over Torshavn and the harbor competes with the food for attention, as do the flocks of birds outside the windows.
