One of Prague's three Michelin star holders is this elegant tasting room, where diners choose from one of two 8- to 10-course prix-fixe menus and sample artful delicacies over an extended evening. Dishes are divided by two thematic menus with courses expertly paired with wines. One menu focuses on classic local specialties, like smoked fish from the ponds of southern Bohemia, while the other consists of the master chef's inspirations, which may blend Continental cuisine with fantasy: think catfish, almonds, and celery root. Be sure to eat lightly beforehand, you'll need a full appetite to last through the multiple courses. One word of caution: fixed-price menus range in price from 2,200 Kč to 3,200 Kč, not including wine pairings. Dinner for two, with wine and tip, can easily climb into 10,000 Kč territory. But for many, the experience is worth every koruna.
