Chef Raúl Correa combines international haute cuisine with local ingredients to create his version of new Puerto Rican cuisine. He is best known for his love of molecular gastronomy and his signature popcorn soup made with truffle butter and rosemary essence. Chef Correa makes a mean pork belly, and his grilled octopus with black bean hummus is delicious. The pork cheeks melt in your mouth. Many of the ingredients are locally sourced and brought in fresh daily, so ask for the chef's special. Whether you are in Old San Juan or Condado, Zest is worth the trip.
