Michelin-starred, Puerto Rico–born Chef Juan José Cuevas successfully operates this fine-dining restaurant in San Juan's most striking hotel, once home to the Vanderbilt family. The main dining room is set on the Atlantic Ocean; elegant and sophisticated, it is large yet intimate, with tables spread out to allow for privacy and comfort. Brazilian-tigerwood tables, dark wood floors, and three striking chandeliers with drooping pearl shells are reminiscent of the Gatsby era. The international cuisine—prix fixe or à la carte—changes seasonally and focuses on local ingredients. You might find a sashimi trio of hamachi, scallops, and tuna; roasted local honey duck breast; or cochinillo ravioli with burrata and caramelized eggplant on the menu.
