Fodor's Expert Review Zuma
A posh eatery with branches from Dubai to Miami, Zuma serves innovative Japanese fare. Working in an open kitchen, the chefs prepare signature dishes like the dragon maki made with prawn tempura, freshwater eel, avocado, and spicy tempura flakes, and the buta bara yuzu miso pork belly skewers with yuzu and miso mustard. The cocktails are equally exotic: the Rhubabu, for instance, is made with rhubarb-infused vodka, sake, and crushed passion fruit, and the Mandarin Fizz combines Japanese shochu infused with jasmine, gin, apple juice, mandarin purée, and sorbet. The restaurant, which comes off like an ultrasophisticated izikaya (a sake bar that serves food), is inside the St. Regis but not part of the hotel.
