Named Asia's best restaurant in 2015, Gaggan is an absolute must for serious food lovers. Chef Gaggan Anand worked under the renowned Ferran Adrià at el Bulli restaurant, in Catalonia, Spain, and he's taken his mentor's teachings about molecular gastronomy to heart. The chicken tikka here comes with chutney foam, and the mutton bhuna gosh is vacuum-packed and bathed in water for a day. It works best to try one of the tasting menus; they range in price from B1,800 to B4,000. Some call Gaggan's cuisine molecular masala, though the chef describes it as "progressive Indian cooking." Whatever it is, it's provocative, tasty, and certainly not cheap.
