The city’s most chic riad-turned-restaurant has become a base for pop-ups from globally renowned chefs. Jerome Waag from Alice Waters’s Chez Panisse in California was the first, with more top chefs to follow for residencies of between one and four months. Their brief: to use whatever’s inspired them at the market that day to create a cross-culinary, four-course, prix-fixe menu. Dishes such as chilled fava bean–and-almond soup and farm chicken braised with fresh figs and anise seed appear on the nightly changing chalkboard menu, while the restaurant's pared-down interior eschews Morocco's traditional color palette in favor of black-and-white tiles, bright white walls, and striking contemporary art prints.
