This charming guesthouse, in the quarter formerly home to city's once-vibrant Assyrian community (some of whom still remain), has great rooftop views and thoughtfully designed stone-walled rooms with Palestinian soaps from Nablus and vintage portraits of local Bethlehem families. It has quickly become a favorite among travelers eager for a taste of West Bank life, and many take part in the weekly Arabic classes. Fadi Kattan is also the chef at the Fawda ("chaos" in Arabic) restaurant, which changes its menu with market availability and has become a destination for Israeli and Palestinian foodies. Breakfast in the courtyard is plentiful and delicious, including savory treats like fresh hummus, falafel, and pita as well as sweet delicacies like homemade fig jam.
