Scientist Nabil Rishmawi renovated his grandmother's house and created Bethlehem's first heritage hotel, with each room named for its original function: the wine room, olive room, and horse room, and so on. Rooms upstairs open up to a common courtyard, where breakfast is served under the shade of two pistachio trees and within eyesight of the Church of the Nativity. All rooms have air conditioning, Wi-Fi, flat-screen TVs, minibars, and thick walls. Ask for a room with a window, as not all have them.
