Mandalay Bay has better pools, better restaurants, better standard rooms and better bathrooms than the other two.
A week is a very long time in LV, though.
I'd go nuts there for a week, especially if confined to one resort.

You might consider the Green Valley Resort, even save the last 2-3 days for here, and only 10 minutes by freeway to the airport. Though not on the strip, it's a relaxing and pampering type of resort, with the casino and hotel separated by an elevator. The room we had was a petite suite, the bathroom alone was worth the location. The pool area is nice, even platforms with huge cushions, and chairs literally in the water. Great bars, great restaurant selection, clean and well designed casino. We would go back at any time. You might check their website for an overview.

I'd go to the JW Marriott in Summerlin for a few days and the remainder on the strip. Gorgeous pool area, very nice rooms & good service.

I agree that I would go nuts if I was confined to the same Vegas hotel for a week...but of the ones you mention, any of the three would be fine.

Stay at the Mandalay Bay, or try there new Hotel simply called "the Hotel". It has Plasma tv's, all suites, and nicer accomodations. The Mandalay usually has specials @ $99/night. It has the best pools, lazy river, Great restaurants, and by far the best of the choices presented.
