Wisconsin cheese in Milwaukee

Hi, I'm planning to go to Milwaukee in Aug, I would like to try a cheese that is authentic and original to Wisconsin. I know that Wisconsin makes really good European cheeses but I would like to try something that was created by the people of Wisconsin. If you know where I can find it in Milwaukee, I'd appreciate it.
I also heard that Milwaukee has a big German community, if that is so, what restaurant would you recommend?

I don't care for German food (too heavy and stodgy for me), but Mader's and Karl Ratszch's are often recommended.

The Wisconsin Cheese Mart is at 1048 N. Old World Third St.

The West Allis Cheese & Sausage Shoppe has a store in the Public Market.
