Where were you when you cooked your best roast on a holiday?

If not "the best," maybe the most fun: About 20 years ago, when the plan called for the kids, DH and I to fly to Texas on C. Day for a Padre Island getaway, I slow-cooked a rump roast a few days before, plopped it in a 2-pound margarine container and froze it. On travel day, I wrapped it in lots of brown paper grocery bags for insulation and tucked it in the luggage. When we finally got to our gulf-front condo about 8 p.m., we tossed together our C. dinner of roast beef, (instant) mashed potatoes and a few trimmings and had a very festive evening.

Here at home many years ago. The oven got turned off, we turned it back on and pushed the temp up, then down, then got it on the table late. My sister thought it was too rare and called it canibal meat but everyone else said it was the best roast beef they ever had. I took a pre-cooked pot roast in my carry-on when we spent Thanksgiving week in a beach house on the NC coast but it came out too dry. I think re-heating it did it in. My son commented that it wasn't as good as usual but his friend told me it tasted just fine.

Well, DFrost and I are both in NH. So a couple points for the New England!
Mine was just last Saturday, for Xmas Eve. Eleven pounds of tenderloin... First 5 minutes at 500*, last 5 minutes on convection, 45 minutes at 350*. A beautiful medium rare! Eighteen people were delighted, we had to broil two!

Thanks~ I think everyone should try to lighten up and enjoy this time of year, especially with enough heavy duty issues in life.
Negativity towards others is a reason some longtime posters left this board, and it's nice when people can be tolerant and overlook misspellings or different opinions of what's appealing as a topic and simply not harp on small stuff. Cheers, J.
