I think Holland America would be a good choice for your dad. Great food, gorgeous ships. We've done Princess and HAL so far, HAL was better. You may want to check out the message boards at cruisecritic.com.

We sailed the Oosterdam, one thing that's nice about HAL is that the juices and hot chocolate is included, whereas you must pay extra on Princess. But Princess and HAL are the dominant cruise lines sailing the Alaksan itinerary, though NCL and RCCL sail there also. Then there's the Radisson ships for a 5* experience

You may want to look at other factors as well. Ports, time in ports, glacier, route, price, ship naturalist.
Any selection will be a compromise and every Alaska sailing is definately worthwhile.
With Seattle departure the routing is the least scenic. I also give a big edge to Glacier Bay which only NCL does out of Seattle. Tracy Arm can be iced out until mid June, limiting the glacier viewings.

I am traveling NCL Sun out of Seattle to Alaska in June.
Not going up to Denali park, but still looking forward to the trip. I also visit cruisecritic.com as learned here on Fodors. It's a great site with lots of information.
