Hi can someone recommend something like The Ashram in california? Like nonstop hiking/fitness for a week? I've been the red mountain spa and enjoyed it but wanted something a little more hard core.

Rancho La Puerta in Tecate, Mexico - just south of San Diego.

I'll second Rancho La Puerta. They have a bus that takes you there from the San Diego airport, I think.

Canyon Ranch in Tucson. There's at least one other around here but can't think of the name offhand.
