If you are a AAA member, their guidebooks offer some walking tour suggestions.

Big Onion Walking Tours has published several books of walking tours. Go to their website (check Google; can't remember it exactly).

There's a great Time Out book on New York Walks that I recommend to anyone I know coming to NY. Each chapter is a walk written by a different person. Gives you lots of insights that a regular guide book wouldn't. Don't have a copy in front of me, but there's sure to be one on Greenwich Village and Soho.

I bought a AAA book that included some walking tours of Soho and Greenwich. I was very disappointed, maybe it was because the data was older (published in 2000). But basically the parts they took me through were more much deader and less interesting that those just following my nose or asking at the hotel. Insight guides with some pictures and discriptions of the area was generally a little better.
