Vegas in mid may

My old roommate and I are with our wives meeting up for four days in Vegas without our kids. We will do a lot of the main Vegas things but I have three questions... 1 How is Red Rock Canyon and how much time to devote to it for average hikers at this time of year? 2. What mid priced restaurant ($35-50) per person is a good value/ nice place for a couple of non seafood lovers? Third anything fun for couples other than the basics that might be quirky for couples? We have a gondola ride and spa treatment set up for the wives and likely eat someplace like Prime once and hit a show Circ or La Reve but want to also for mid value entertainment as well. Suggestions

If you go west on Charleston, you can be to Red Rocks in less than an hour. I wouldn't hike for more than 2 hours. I did see some interesting rock climbers there and watched for awhile.
For a late lunch (before 3PM) I like the buffet at the Golden Nugget (off the Fremont Street Experience).
For quirky, there is at least one place where you can fire a full auto machine gun.
For one night be sure to be on Fremont Street for the light show above the street.
If you've ever watched the show "Pawn Stars" you can visit the shop near the north end of LV Blvd.

If you do go out on Lake Meade, bring lots of sunscreen, We all got sunburned in the rented boat.
Continue north from the marina to get to Valley of Fire State Park. Out the west entrance of Valley of Fire to get back to I-15 to get back to LV.

Thanks for the ideas. I think Red Rocks and/or Lake Meade may be on our itinerary weather permitting. My wife really likes the menu at Olives for slightly upscale. My old roommate and I are think Hugo Cellar when in downtown Freemont area one night.

My wife really wants to see the Le Reve show. How bad are the splash zone seats? How wet do you get? Is dinner at the Paris Effel Tower decent? We have narrowed our dinners down to Hugo Cellar, Vic and Anthony's during a downtown old Vegas night and looking for a mid range restaurant before our show on the Strip. It has been 11 years since last in Vegas and we don't want to spend a fortune nor do we want to eat the 3.99 buffet if they even exist anymore. Something in between. My wife looked at menu of Olive and was intrigued.
