North Carolina and South Carolina aren't in the NE. Keep in mind both states will be really really hot and humid in the summer. Go to the coast.

I always thought that the Windjammer cruises offered by a few different operators out of Maine were somewhat unusual. I've never been on one so I can't speak from experience but I have read that you cruise on a tall ships type vessel, your food is provided, you sail into small harbors up and down the coast of Maine and you can participate in sailing the vessel or not at your discretion. Check out sailmainecoast.com. For other NE vacation ideas check out newengland.com
