Honestly I think your best bet is just to head to Lower Broadway and see what you can find. That's where all the honky-tonks and bars are. I don't know which will allow you in (Robert's is 21+), but if you need to stay right downtown, there's nothing else to do that you won't find by walking around the area.
A little further out: Pinewood Social (food, drinks, bowling alley) is open till 1am and the Hermitage Cafe is open all night.
There are plenty of music venues around town; age limits usually depend on the show, and you'd need to rideshare or cab to/from most of them. And most of them will close by 1am-ish or somewhere in there.
