I'm not surprised that there isn't a car rental place in Gardiner. It's a very small town. Even West Yellowstone isn't very big but as I've mentioned before it's more centrally located for seeing all of Yellowstone so I'm not surprised there is one there.
Driving from Jackson to Mt. Rushmore, visiting one of the caves, visiting Devil's Tower and make it to Gardiner, WY by way of the Beartooth Highway in 5 days in an RV is going to be challenging. I think you're going to find that the RV is going to be a lot slower going than a car. You might consider one more night on the road to give yourself breathing room and incase you hit bad weather.
Hwy 26 as you leave Jackson is the Wind River Range and a very scenic mountain road.
We haven't done Jewel Caves but we have done Wind Cave. If you've never done a cave, then it's worth going. It's not one of the beautiful ones like Carlsbad Caverns....it's just BIG. Since you've driven all this way, maybe Badlands National Park would be an idea.
Devil's Tower is worth the drive. We've never gone north from there so have no idea how the roads are.
Having a car for 5 days to visit Yellowstone is an excellent idea.
