This should be easy but how to get to NYU...
from Penn Station? I tried to figure it out, and it looks like I should just be able to take the N from Herald Square but not really sure?! I really don't want to have to transfer trains.

From Penn Station you can take the A express train or the C local train to the West 4th Street/Washington Square stop. The NYU campus and buildings stretch all over the village - do you have a specific address you're looking for? If not - the main campus buildings surround Washington Square - which is one block east of the subway station stop.

When you get off the train at W4th look for the McDonald's on the corner and you want to walk in that direction to Washington Square Park and NYU. It will be easy to find.

If you can get yourself over to Herald Square, it's best that you take the R or W to 8th Street, get out at the Waverly Street exit, and walk towards the park that way. This way, you get to walk by many of the NYU buildings.

Yes, actually the A and C feed into Penn Station - if you want to take the R or W it is two blocks east at Herald Square (Broadway and 34th St.) There are long connecting tunnels between the lines, but they are kinda funky.
